Thousand Leaves Stuffed with Pastry Cream

Enjoy this delicious cake filled with a pastry cream with a crunchy texture and where the almonds give a spectacular touch. Do not miss the opportunity to prepare this delicious dessert; It will become your favorite!

Ingredients

  • 5 pieces of San Juan® egg for the pastry cream
  • 3/4 of Cup of sugar for the pastry cream
  • 50 grams of cornstarch for the pastry cream
  • 2 cups of milk for the pastry cream
  • 1 piece of vanilla bean for the pastry cream
  • enough of flour to extend
  • 500 grams of puff pastry
  • 1 Cup of almond fillet and toast
  • 2 1/2 cups of sugar glass for the glaze
  • 5 spoonfuls of Water for the glaze
  • 150 grams of bitter chocolate melted

    Preparation

    Preheat the oven to 200 ° C.
    Separate the San Juan® egg yolks from the whites.
    For the pastry cream, in a bowl beat the yolks with sugar and cornstarch. Reservation.
    Heat the milk with the vanilla in a saucepan over medium heat without letting it boil, add a little milk on the yolks to stabilize with the temperature of the milk.
    Pour the egg yolks over the hot milk, with the help of a whisk batter, continuing to move until it has a thick consistency. Let cool and reserve.
    Spread the puff pastry on a floured surface of approximately 3 mm using a rolling pin, cut 4 squares of 20 cm x 20 cm.
    Place the sheets of puff pastry in a tray with waxed paper. Bake about 20 minutes with a tray on top, to prevent the dough from growing. Remove from the oven and cool.
    Add the pastry cream on a box of puff pastry with the help of a spatula, place on top the almonds, another box of puff pastry and repeat the process. Finish with a sheet of puff pastry.
    For the glaze, in a bowl mix the icing sugar with the water, until getting a glaze of thick consistency.
    Pour the glaze over the last layer of puff pastry, add lines of melted chocolate, and with the help of a toothpick, pull with direction to one side and then to another.
    Enjoy with a cup of tea.

    TIPS

    For the glaze you can replace the water with almond essence.
