  • 2 1/4 cups wheat flour, 280 g, for the pancake mix
  • 1 cup sugar, 200 g, for the pancake mix
  • 1 tablespoon Rexal® baking powder, 6 g, for the pancake mix
  • 1 teaspoon baking soda, for the pancake mix
  • 1 teaspoon salt, 7 g, for the pancake mix
  • 1 3/4 cups rice milk, 250 ml, for the pancake mix
  • 1/4 cups vegetable oil, 60 ml, for the pancake mix
  • 1 tablespoon apple cider vinegar, 15 ml, for the pancake mix
  • 1 teaspoon vanilla essence, 7 ml, for the pancake mix
  • 4 tablespoons cocoa powder, 10 g, for the chocolate mixture
  • vegetable oil, to grease
  • dark chocolate, melted, for garnish

Preparation

Preheat the oven to 180 ° C.
For the base mix of the pancake, pass the wheat flour through a strainer to sift it into a bowl, add the sugar, the Rexal® Baking Powder, the salt and the bicarbonate, and integrate. Pour in the rice milk, the vegetable oil, the apple cider vinegar and the vanilla essence; Mix with the help of a balloon whisk until you get a slightly thick and uniform mixture.
For the chocolate mixture, separate half of the previous mixture in another bowl and add the cocoa powder, first passing through a strainer to sift, integrate with the help of a balloon whisk.
Grease a rectangular or muffin-shaped baking dish with vegetable oil, pour, from the middle of the bowl, three tablespoons of the vanilla mixture (base mixture) and intersperse with a tablespoon of the chocolate mixture (always pouring the mixtures from the middle). Repeat until finished with the mixtures.
With the help of a wooden skewer stick, make the shape of the marbling by “drawing” a zigzag on the mixture, start first across the width, that is, from side to side of the mold, and then go along in a single movement .
Bake at 180 ° C for 35 minutes; To know if the cake is ready, click with a wooden toothpick in the center: if it comes out clean, then it no longer needs to be in the oven.
Before unmolding, let it cool. If you wish, you can decorate with melted dark chocolate and red berries. Accompany with a hot drink.
