Ingredients

15 portions
  • 1 liter milk
  • 1 1/2 cups sugar
  • 2 rajas cinnamon
  • 1 whole clove
  • 1/2 teaspoons baking soda
  • 50 grams almond, peeled and finely ground
  • 10 egg yolks
  • 1 tablespoon orange blossom water
  • 1 1/2 cups schnapps, of cane
  • 1/2 teaspoons nutmeg

Preparation

Boil the milk with sugar, cinnamon, cloves, nutmeg and baking soda in a little milk for 35 min. Remove from the heat and add the ground almonds, put back on the fire and let boil for five more minutes, let cool.
Beat the egg yolks to the point of string, add the milk little by little and return to the fire until a not very thick atole forms. Remove from the heat, add the orange blossom water and the brandy. Save or pack in bottles.
