The masala chai is a drink native to southern India where it was used in a sacred way to energize the body, activate it and keep the mind alert. It is made up of spices such as cardamom, cinnamon, cloves, ginger, anise, and of course, black tea. Enjoy this amazing homemade chai recipe!

Ingredients

4 portions
  • 3 cups milk
  • 1 1/2 cups Water
  • 1 teaspoon cardamom, whole
  • 1 teaspoon whole black pepper
  • 4 cloves
  • 3 star anise
  • 1 teaspoon ground ginger
  • 1/2 rajas cinnamon
  • 6 tablespoons brown sugar
  • 2 tablespoons black tea
  • enough star anise, to decorate
  • enough cinnamon, to decorate

Preparation

Heat the milk and water to medium heat and keep it on the fire.
With the help of a molcajete or mortar, grind the spices one by one and add them to the milk slowly. The total infusion process will take approximately 15 minutes.
Finally add the sugar and black tea; infuse for 1 min and strain.
Serve in heat resistant cups or glasses; Garnish with cinnamon and star anise.

TIPS

Add the spices little by little while the milk is kept boiling, in this way all the flavor of each of them is infused to finally add the black tea, which should not be more than a minute in the milk before straining or otherwise. On the contrary, it becomes bitter.
