These crispy flutes are very special because they are not only accompanied with green sauce, but they bathe in it. Serve them in deep bowls and "chopealas", if you have not done them you do not know what you're missing.

Ingredients

4 servings
  • 2 bottles of green sauce Clemente Jacques ®
  • 1/2 kilo of Corn tortillas elongated for flute
  • 1 chicken breast
  • 1 Cup of refried beans
  • 1/4 of kilo of Oaxaca cheese
  • 110 grams of Cotija cheese
  • 1 White onion
  • 100 milliliters of sour cream
  • vegetable oils sufficient quantity

    Preparation

    Cook a chicken breast with bone in a liter and a half of water, onion, garlic, sea salt, bay leaf, and cilantro. Discard the chicken and reserve the broth.
    Heat the Clemente Jacques ® Green Sauce with a cup of chicken broth. Let it boil.
    In a comal or pan warms the tortillas, this step is super important because otherwise they will break when bending them.
    Place refried beans, Oaxaca cheese or shredded chicken along each one if you prefer. Better yet, combine them.
    Fry them in enough oil, this should be hot. Bathe them with the oil until they are crispy. Remove the excess oil with a napkin.
    Serve the sauce in an extended dish or soup and introduce the flutes.
    Accompany with cream, cotija cheese and onion rings.

    PRESENTATION

    Place a ladle of hot sauce in a deep dish and place 3 or 4 flutes per dish.

    TIPS

    Form the flutes with freshly made, warm tortillas. That way they will not break when making them.
