This low carb recipe has a slight touch of bacon, so it combines very well light ingredients with others of much more flavor. It is a delicious sweet chili peppers stuffed with creamy risotto, made of cauliflower bits with mushrooms, it is very easy to make and it will only take you 25 minutes to make it following our practical step by step.

Ingredients

8 servings
  • 1/2 cup of bacon finely chopped
  • 1/4 of cup of white onion finely chopped
  • 5 tablespoons of shallot finely chopped
  • 2 tablespoons of garlic finely chopped
  • 1 cup of Cauliflower Eva® Bits
  • 1 cup of mushroom filleted
  • 1 cup of Knorr® Vegetable Broth bucket dissolved in water
  • 1/4 of cup of cream low fat
  • 1/2 cup of parmesan cheese
  • 1 teaspoon of fresh oregano
  • 10 sweet peppers fresh, skinless and cut in half
  • enough of basil fresh

Preparation

For the rice, heat a deep pan over medium heat and cook the bacon until it browns and releases the fat, add the onion, shallot, garlic and cook until bright. Add the EVA® Cauliflower Bits and cook for 5 minutes, add the mushrooms and keep them on the fire until they soften.
Pour the KNORR® Vegetable Broth prepared according to the packaging instructions and cook until it evaporates. Add the cream to refine and cook 5 more minutes.
Grate Parmesan cheese over the preparation. Remove from cooking.
Serve the creamy rice in the sweet peppers with more Parmesan cheese, decorate with basil and enjoy.

PRESENTATION

Garnish with fresh basil and Parmesan.

TIPS

To clean the peppers, fry them quickly in very hot oil until the skin comes off, with a knife clean the skin, then open, unveil and, finally, rinse with natural or purified water.
