Ingredients

4 portions
  • water, hot
  • 2 pumpkins, cut into medium pieces
  • 4 green tomatoes, shelled
  • 4 tablespoons vegetable oil, to fry the chili
  • 2 serrano chiles, no tail
  • 1/4 onions
  • 1 clove garlic, without skin
  • 1 cup coriander leave
  • sea salt

Preparation

Cook the squash and green tomato in a saucepan with hot water for about 5 minutes or until the vegetables are soft enough. Drain and cool in a stream of cold water. Reserve until use.
In a frying pan with hot vegetable oil, fry the serrano pepper over medium low heat until the skin begins to brown, try to stir constantly to obtain a uniform browning. Reserve the chili pieces with everything and oil.
Blend the squash and the cooked green tomato together with the onion, garlic, serrano pepper with oil, coriander and grain salt until completely integrated. You should get a semi-thick consistency, if the consistency is not what you want you can add a little more oil to the sauce.
Serve and accompany with your favorite tacos.

With this sauce, accompany your favorite tacos, golden, basket, suadero or even just accompany it with cheese and chips.

TIPS

If you cannot get green tomato, increase the amount of pumpkin and add a piece of cucumber without skin or seeds, it will provide a fresh flavor and a more intense color.
