Ingredients

8 servings
  • 2 spoonfuls of lard
  • 1/4 of piece of onion finely chopped
  • 1 clove of garlic finely chopped
  • 2 pieces of Chile de árbol pepper
  • 4 cups of whole corn kernels
  • 1 liter of Water
  • 3 twigs of epazote
  • enough of Salt
  • enough of black pepper
  • to taste of Mayonnaise
  • to taste of fresh cheese fallen apart
  • to taste of pequin pepper
  • to taste of green lemon (juice)

    Preparation

    In a pan, heat the oil and fry the onion, add the garlic, the tree peppers and fry lightly.
    Add corn kernels, water and epazote; Season with salt and pepper, and cook for 30 minutes, or, until the corn kernels are soft.
    Serve in clay jars, accompanied by mayonnaise, fresh cheese, chili pepper and lemon.

    TIPS

    You can substitute the water for chicken or beef broth, if you want to give it a more Mexican flavor you can add 1 cup of pulque in the cooking.
