Prepare this rich and easy snack of low-carbohydrate "sushi" balls, as they are prepared based on Eva® cauliflower bits. They are stuffed with a homemade tampico, covered with tuna, salmon and avocado. You will love it!

Ingredients

6 servings
  • 1 bag of Cauliflower Eva® Bits (454 g)
  • enough of Water
  • to taste of Salt
  • 1/2 Cup of surimi finely chopped
  • 2 spoonfuls of red onion finely chopped
  • 1 piece of serrano pepper finely chopped
  • 3 spoonfuls of Sriracha sauce
  • 1 tablespoon of light mayonnaise
  • 1/2 Cup of cream cheese light at room temperature
  • 100 grams of fresh salmon (in fine cut sashimi)
  • 100 grams of fresh tuna (in fine cut sashimi)
  • 1 piece of avocado cut into thin sheets to decorate
  • to taste of black sesame seed and white, toasted to decorate
  • to taste of ponzu soy sauce To accompany

    Preparation

    Cook the cauliflower Eva® in a pot with boiling water and salt for 3 minutes. Cut cooking in cold water and drain. It dries very well.
    For the tampico, mix the surimi with onion, chili, sriracha sauce and mayonnaise. Season with salt if necessary.
    Mix the cauliflower Eva® bits with the cream cheese and form balls with the help of your hands, placing a little tampico in the center. Refrigerate a few minutes to keep the shape.
    Cover the balls with slices of salmon, tuna or avocado to your liking. Garnish with sesame and serve.

    PRESENTATION

    On a plate accompanied by ponzu.

    TIPS

    To make them better, make the balls with non-stick plastic. You can substitute cream cheese for jocoque for a lighter version.
