Ingredients

4 portions
  • 1 cup walnut, toast
  • 1 cream cheese
  • 2 cups apricot, dry
  • 4 chipotle chilies, dry
  • 1 cup orange juice
  • enough fresh coriander, to decorate

Preparation

Chop the pecans finely and place them on a plate and cover the cream cheese on all sides. Reserve.
For the sauce, blend the apricots with the chipotle in marinade and half of the orange juice until you obtain a puree. Cook the previous preparation in a saucepan with the rest of the orange juice until it thickens. Season and let cool.
Serve the apricot sauce as a thin layer on a plate. Place the pecan covered cheese on top and decorate with cilantro. Accompany with crackers.

PRESENTATION

Serve the chabacano sauce as a thin layer on the platter and accompany with cookies.

TIPS

Cools the pecans after toasting them, because if you grind it hot, the fat can form a paste instead of chopping them.
