Ingredients

12 portions
  • 3 cups olive oil
  • 2 cloves garlic
  • 2 leaves bay (laurel)
  • 3 pieces allspices
  • 5 pieces black pepper, pink
  • 5 pasilla chili peppers
  • 5 morita chili peppers
  • 2 tablespoons coarse salt
  • 2 tablespoons raw sugar
  • 1 tablespoon paprika
  • 3 cups ricotta cheese
  • 1 teaspoon oregano
  • to taste salt
  • to taste black pepper

Preparation

Heat the olive oil in a pot over medium heat and add the garlic, bay leaf and peppers; add the pasilla peppers and the morita peppers, fry for a few seconds and remove.
Let cool, grind the peppers with a little oil and add the rest of the oil, add the paprika, salt and sugar. Reserve for 48 hours.
Mix the ricotta cheese with the oregano and season with salt and pepper.
Serve on a plate and add the chili oil on the surface. Decorate with oregano and accompany with Saladitas cookies.

PRESENTATION

The dip is accompanied with chili oil and with an oregano branch.

TIPS

The longer you let the chili oil rest, the more flavor it will have.
