Ingredients

8 portions
  • 1 clove garlic
  • 1 jalapeño chile
  • 1 poblano chile
  • 1 serrano chile
  • 1 cup cream cheese
  • 1/2 cups whipping cream
  • 1/4 cups fresh coriander
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon olive oil
  • 1 cup bacon, finely chopped and fried, to serve
  • 1 cucumber, cut into sticks
  • 1 cup bell pepper, of colors, cut into sticks
  • 2 carrots, cut into sticks
  • 1 cup celery, cut into sticks
  • 1 beet, cooked and cut into sticks
  • 1 cup jicama, cut into sticks
  • 2 cups cherry tomato, of various colors
  • 1 cup vegetables, dehydrated
  • parsley
  • rosemary

Preparation

In a comal roast the garlic together with the chiles for 10 minutes. Once roasted, reserve the garlic and place the chiles in a plastic bag to sweat for 15 minutes.
Remove the chiles from the bag, and with a knife, remove the skin, remove the veins and the seeds.
Blend cream cheese with chilies, roasted garlic, whipping cream, cilantro, salt, pepper and olive oil until smooth. Serve with vegetables and garnish with fried bacon.
