Fried Quesadillas

These classic quesadillas of fried corn dough are ideal for a Mexican style meal. The delicious squash blossoms filling with a touch of epazote and soft oaxaca cheese is the ideal combination to eat with a spicy sauce.

Ingredients

6 servings
  • 2 cups of cornmeal
  • 1/4 of Cup of wheat flour
  • 1/8 of Cup of oil
  • enough of Water
  • 1/4 of teaspoonful of Salt
  • 1 teaspoonful of baking powder
  • 1 tablespoon of vegetable oil
  • 1/2 Cup of onion finely chopped
  • 2 cloves of garlic finely chopped
  • 2 cups of squash blossom clean and chopped
  • 1/4 of Cup of epazote finely chopped
  • 1 pinch of Salt
  • 1 Cup of Oaxaca cheese shredding
  • 1 Cup of vegetable oil for frying
  • 1 Cup of lettuce in strips
  • 1/4 of Cup of sour cream
  • 1 Cup of fresh cheese
  • 1/4 of Cup of green sauce

    Preparation

    For the dough, mix both flours, the 1/8 cup of oil, water, salt and baking powder. Knead with your hands until incorporated. Add more water if necessary.
    Heat a pan, add the teaspoon of oil, the chopped onion, garlic, the squash blossoms and epazote. Cook for 5 minutes and season to taste.
    Make tortillas with the dough and fill them with Oaxaca cheese and the mixture of squash blossoms.
    Close and fry in hot oil.
    Open and serve with lettuce, sour cream and salsa.

    PRESENTATION

    Serve the quesadillas with lettuce, cream, cheese and the sauce of your choice.

    TIPS

    The amount of water is very variable, start with a cup of water and add little by little until the dough is ready.
