Preparation
Sauté the strips of chili in 1 tablespoon of butter, season lightly with salt and pepper and set aside.
Sauté the chorizo in pieces and reserve.
Lightly grease 2 casseroles or small refractory containers. In one, place half the cheese and half the chili strips. In the other, place the rest of the cheese and half of the chorizo. Cover the casseroles with aluminum foil and put them on low heat until the cheese starts to melt (approximately 3 minutes). Uncover and cook another 2 minutes or until the cheese melts completely. Put the remaining strips of poblano chili and the remaining chorizo in their respective casseroles.
Serve hot with flour tortillas so everyone can prepare their tacos. It can also be served with a spicy Mexican sauce.
