Ingredients

10 portions
  • 3 cups wheat flour
  • 3 cups PAN® precooked white corn flour
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • enough Water, tibia

  • enough edible food coloring, Red
  • enough guacamole, To accompany
  • enough pico de gallo, To accompany
  • enough coriander, to decorate

Preparation

To form the hat mold, cover a cake mold with a diameter of 40 cm with aluminum foil and place a bowl of 15 cm in diameter in the center, cover it with aluminum foil. Reservation.
In a bowl pour the warm water, the salt, add the Precooked White Corn Flour PAN®, the oregano, the thyme, the wheat flour and mix with the help of a spoon until integrated, little by little until it has a homogeneous consistency, separate 2 dumplings. Reservation.
Add green food coloring to a ball of dough and mix until completely integrated. Repeat the process with the red food coloring and the ball of dough. Reservation.
On a floured surface, spread the dough 1 cm thick, cover the mold previously wrapped in aluminum. Spread the red mass into a strip and cut it 2 cm thick, with the help of a brush, varnish with a little water.
Stick the red strip on the hat as shown in the video. Repeat the process with the green dough, this time 1 cm thick and stick on the red strip of the hat.
Roll out 2 more strips of red dough and green dough 2 cm in diameter and cut out triangles. Put a little water on the triangles and stick on top of the hat, spray with cooking spray.
Bake 1 hour at 170 ° C, carefully remove the hat from the mold and bake for 20 more minutes. Let cool in the oven off.
Cover the hat with the guacamole, decorate with the pico de gallo and cilantro. Enjoy.
