5 portions
  • 1 1/2 kilos cornmeal
  • 1 1/2 liters Water
  • 1 1/4 liters Oléico® safflower oil
  • 1 1/2 kilos tomato
  • 1 1/2 onions
  • 1 liter Water
  • salt, to taste
  • 6 eggs

Boil the liter of water in a saucepan. When it breaks the boil, immerse the eggs and let cook for 10 minutes or until the shell begins to break. Turn off the fire. Drain the water and let the eggs cool to remove the skin.
Cut the tomato into small squares and the onion into thin slices. Place them in a saucepan and add a tablespoon of Oleico® Oil to fry them. Add salt at your wish. Cover and leave over medium heat for about ten minutes or until the tomato is cooked and the onion is transparent. Reserve.
Add half a liter of water and salt to taste cornmeal. Knead two or three minutes. Form with it balls of approximately 40-50 grams. Place one at a time in the tortilla making machine and flatten them by covering the pellet with a plastic and then detach it easily from the machine.
Prepare more balls until the dough is finished, placing the tortillas on a cloth napkin while the oil is heating.
Put to heat in a pan enough Oleic® Oil to fry the salbutes. Once hot, fry the salbutes for a few minutes on both sides until the dough is cooked. Allow to drain on absorbent paper.
Place the egg on the salbutes and pour the fried tomato on top. Serve immediately.

Serve them newly made preferably. Accompany them with a typical drink: a glass of horchata de arroz bien helado. They can be accompanied with habanero chile sauce if you wish.

To know if the oil is hot enough to fry, pour a little of the dough into the oil. If it sinks, let it continue to warm up. If it floats, it is ready to start frying.
