Preparation
For the sopes: Form circles with a thickness of 2 or 3cm with the help of a glass. Pinch them with your fingers to create the edges.
Cook them in a pan with enough hot oil as deep frying.
Meanwhile mix perfectly the refried beans with the shredded chorizo and previously cooked in a frying pan. Season to taste. Add if you want finely chopped onion.
Once fried, place the sopes on absorbent paper to remove all the excess fat.
Spread the mixture of beans and chorizo in each one.
Place on each sope a spoonful of cream, chopped lettuce (optional) and sprinkle with Cotija cheese or fresh cheese.
