Ingredients

  • 1 pinch black pepper
  • 1 tablespoon chicken consommé
  • 2 tablespoons oil
  • 1 kilo tortilla dough
  • 1 tablespoon baking soda
  • 1/4 cups milk
  • fresh coriander, to taste
  • salt, to taste

Preparation

Cook the chicken breasts with enough water and salt, a clove of garlic and onion. Remove from the broth and discard. Devein the chiles and soak in hot water until they are soft.
Roast the tomatillos with the tomatoes, garlic and onion and blend with the cloves and pepper if it is too thick to add a little chicken broth and strain.
Fry the sauce in a pot with the oil until it is seasoned, add the chicken broth and dissolve 4 tablespoons of dough in a little chicken broth, add the sauce and let it boil until it is thick.
Mix a little more oil with the dough, salt, milk and baking powder, make tortilla and when they are half cooked in the comal fill with yellow (salsa), chicken and cilantro. Fold and finish cooking. Repeat with the rest of the dough.
