These tacos have been prepared for decades in my family. They are an excellent option for family gatherings because they yield a lot and love children as well as adults.

Ingredients

75 portions
  • 1 1/2 kilos ground beef
  • 1 1/2 kilos ground pork
  • 1 kilo potato, white
  • 2 lemon, big
  • 1 kilo corn tortilla, for tacos
  • 1 pinch salt
  • 1 pinch ground pepper
  • Oil Oleic®, sufficient quantity
  • 5 tomatoes, big
  • 8 morita chili peppers
  • 1 onion
  • 1 clove garlic
  • 1/2 packages panela cheese, grated
  • 250 grams cream
  • 1/2 lettuce, finely chopped, disinfected and drained

Preparation

Cook the potatoes with salt and onion. (The express pot can be used).
Press the potatoes still hot.
While the potatoes boil, stir both meats with salt and ground pepper.
Add the juice of the lemons. Let stand in the refrigerator for at least half an hour.
Add the already cold pressed potatoes to the meat.
With the tortillas still hot or warm, fill the tacos with the mixture of potatoes and meat. Fold them in half and let them cool for at least half an hour.
Heat a sufficient amount of oleic oil in a deep pan.
Drain the tacos on paper towels or brown paper.
For the sauce, roast the tomatoes and the blackberries. Let the tomatoes cool; Meanwhile, soak the chiles in warm water. Grind with garlic, onion and salt.

PRESENTATION

Serve hot accompanied by black pepper sauce, lettuce, grated cheese and cream. Red sauce can be substituted for green sauce.

TIPS

If you have enough time, let the filled tacos rest for longer before frying. They can also be eaten cold, so they can be taken as food for excursions, field trips or field days. If you wish, replace the small tortilla with a normal sized omelet, thus they will have approximately 40 tacos.
