Preparation
In a large skillet, heat the oil on low heat. Add the onion, salt, pepper, sugar and herbs. Stir and let it cook for 45 minutes to an hour until the onion is caramelized. Stir occasionally so it does not burn.
Preheat the oven to 475F (250 C).
Spread the pizza dough to a thickness of 2/3 cm. With the cookie cutter, cut 24 circles. Arrange the dough cut on a baking sheet. Put a little caramelized onion on each circle, then a little goat cheese. Cook until golden brown and bubbling, about 10 minutes.
While the pizzas are still hot, put a piece of prosciutto on top. Arrange them on a platter to serve and decorate with sprigs of parsley or rosemary.
