Octopus Brochette with Red Fruits Sauce

A delicious octopus brochette accompanied by a Red Fruit Sauce, a perfect canapé for any event that seafood lovers will conquer completely. Its rich flavor and texture will dazzle you.

Ingredients

  • 100 grams of Strawberry
  • 100 grams of raspberry
  • 100 grams of blackberry
  • 250 milliliters of Red wine
  • 100 milliliters of brandy
  • 100 grams of sugar
  • 30 grams of echallot
  • 15 grams of Butter
  • 1 octopus
  • 200 grams of Strawberry in halves
  • 1 pinch of Salt
  • 1 pinch of Pepper
  • 1 pinch of paprika
  • enough of bamboo stick

    Preparation

    For the Sauce: Smoke the echalot with the butter. Add split strawberries in quarters, raspberries, blackberries and sauté
    In a separate pan, flame the brandy and add to the sauce. Blend and strain, rectify seasoning and reserve.
    For the Brochette: Form the skewer intercalating octopus and strawberries. Add salt, pepper and paprika. Let brown until obtaining the desired color.
    Remove from the pan and sauté with the red fruit sauce.
