Ingredients

4 portions
  • 100 grams strawberry
  • 100 grams raspberry
  • 100 grams blackberry
  • 250 milliliters Red wine
  • 100 milliliters brandy
  • 100 grams sugar
  • 30 grams shallot
  • 15 grams butter
  • 1 octopus
  • 200 grams strawberry, in halves
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch paprika
  • enough bamboo stick

Preparation

For the Sauce: Smoke the echalot with the butter. Add split strawberries in quarters, raspberries, blackberries and sauté
In a separate pan, flame the brandy and add to the sauce. Blend and strain, rectify seasoning and reserve.
For the Brochette: Form the skewer intercalating octopus and strawberries. Add salt, pepper and paprika. Let brown until obtaining the desired color.
Remove from the pan and sauté with the red fruit sauce.

PRESENTATION
