Preparation
In a large pan heat the oil and add the potatoes, onions, peppers and salt.
Cook over medium heat for 30-45 minutes until the vegetables are well cooked.
Pour into a bowl and let cool for 5-10 minutes.
Add to the bowl the beaten eggs and the serrano ham mix.
Put a tablespoon of oil in the large pan and add the egg and potato mixture.
Simmer for 10 minutes. Remove from heat, cover and let stand for 10 minutes.
Invert the tortilla on a plate and replace it in the pan to cook the other side for 15 minutes over low heat.
