Potatoes Locos with Cochinita

If you like exotic snacks, we recommend these crazy potatoes with cochinita pibil, combined with churritos, peanuts, pickled onions with habanero pepper and a fresh touch of cucumber, in addition to being served with guacamole. Exquisite!

Ingredients

4 portions
  • 1 cup red onion, filleted
  • 1/4 cups habanero pepper, filleted
  • 1 cup cucumber, cut into cubes
  • 1/2 cups white vinegar
  • 1/4 cups lemon juice
  • 2 tablespoons oregano
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 avocado, for the guacamole
  • 1/2 cups fresh coriander, finely chopped, for the guacamole
  • 1/4 cups serrano pepper, finely chopped for the guacamole
  • 3 tablespoons lemon juice, for the guacamole
  • 1 cup japanese peanut
  • 2 cups cochinita pibil
  • 1 cup Tostitos® salsa verde tortilla chips
  • 1 cup Churrito
  • 1 cup Takis, green
  • 2 tablespoons sauce, black
  • 1 cup hot sauce
  • to taste lemon, to serve

Preparation

In a bowl mix the purple onion with the habanero pepper, the cucumber, the white vinegar, the lemon juice, season with the oregano, salt and pepper to your liking. Reserve until they change color or are disfigured.
In a bowl mix the ingredients of the guacamole, until incorporated, season to your liking with salt and pepper.
In a bowl mix the peanuts with the cochinita pibil, the green sauce tostitos, the churritos and takis. Serve in your bag of chips, accompany with onions, guacamole and sauces. Add a few drops of lemon. Enjoy

PRESENTATION

Serve with onions and guacamole.
