Preparation
Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add half of the onion and garlic and brown for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pepper and pour into a deep dish.
Repeat the same process to make the pumpkin flower filling.
With a tortilla you have tortillas with tortilla dough.
Fill the tortillas with a bit of Oaxacan cheese and the filling of huitlacoche or pumpkin flower. Seal the quesadilla well with your fingers.
Cook the quesadillas either in a comal (if you want them without fat) or in oil if you prefer fried.
