Pumpkin Flower and Huitlacoche Quesadillas

These rich quesadillas of dough are stuffed with oaxaca and huitlacoche or pumpkin flower.

  • 1/2 kilos tortilla dough
  • 2 cups huitlacoche corn mushroom, fresh or canned
  • 2 bunches squash blossom
  • 300 grams Oaxaca cheese
  • 2 cloves garlic
  • 1/2 onions, chopped
  • 2 tablespoons vegetal oil
  • to taste black pepper, to taste


Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add half of the onion and garlic and brown for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pepper and pour into a deep dish.
Repeat the same process to make the pumpkin flower filling.
With a tortilla you have tortillas with tortilla dough.
Fill the tortillas with a bit of Oaxacan cheese and the filling of huitlacoche or pumpkin flower. Seal the quesadilla well with your fingers.
Cook the quesadillas either in a comal (if you want them without fat) or in oil if you prefer fried.


Serve hot quesadillas accompanied by a green or red sauce.


If you can not buy dough for tortillas you can buy corn flour and make the dough at home.

Duda sobre kcal una pregunta. En la información nutricional más abajo se menciona que aporta 432 kcal por porcion. Cuantas quesadillas es una porcion. Una? se me haría excesivo
