Pumpkin Flower Quesadillas Fritas

These classic quesadillas of fried corn dough are ideal for botanizing in a very Mexican style. The delicious pumpkin flower filling with a touch of epazote and soft oaxaca cheese is the ideal combination to eat with a spicy sauce.

Ingredients

  • 2 cups of cornmeal
  • 1/4 of Cup of wheat flour
  • 1/8 of Cup of oil
  • enough of Water
  • 1/4 of teaspoonful of Salt
  • 1 teaspoonful of baking powder
  • 1 tablespoon of vegetable oil
  • 1/2 Cup of onion filleted
  • 2 teeth of Garlic finely chopped
  • 2 cups of pumpkin flower clean and chopped
  • 1/4 of Cup of epazote finely chopped
  • 1 pinch of Salt
  • 1 Cup of Oaxaca cheese shredding
  • 1 Cup of vegetable oil to fry
  • 1 Cup of lettuce in strips
  • 1/4 of Cup of sour cream
  • 1 Cup of fresh cheese
  • 1/4 of Cup of green sauce

    Preparation

    For the dough, in a bowl combine the corn flour with the wheat flour, the oil, the water, the salt and the baking powder. Knead with your hands and add more water if necessary, to form a well-integrated dough. Reservation.
    Heat a medium skillet with oil over medium heat, add the white onion, garlic, pumpkin flower, epazote, cook for 5 minutes and season to your liking. Cool the filling and reserve.
    Form tortillas and fill with oaxaca cheese and sautéed pumpkin flower, close the tortillas to form the quesadilla. Form all the quesadillas and reserve.
    Heat a pot with vegetable oil, fry the quesadillas until they are crispy, remove the excess fat with an absorbent napkin.
    Open the quesadillas and serve with lettuce, cream, cheese and salsa.

    PRESENTATION

    Serve the quesadillas with lettuce, cream, cheese and the sauce of your choice.

    TIPS

    The amount of water is very variable, start with a cup of water and add little by little as you "ask" for the dough.
