Make a delicious and healthy Caprese Botana as a snack. This recipe is made with tomato, mozzarella cheese and a dressing of balsamic vinegar and olive oil; but the best thing is that it is wrapped in puff pastry dough, which gives it a crispy touch and a spectacular flavor. For this Caprese Regalita Botana you can make the puff pastry yourself from the ingredients or buy it ready to bake and thus save time in the preparation.   • 250 grams puff pastry
  • enough flour, to extend
  • 1 package mozzarella cheese, sliced
  • 2 beefsteak tomatoes, in slices
  • enough egg, to glaze
  • 8 leaves basil
  • 1/4 cups balsamic vinegar, for the vinaigrette
  • 4 tablespoons olive oil, for the vinaigrette
  • enough salt, for the vinaigrette
  • enough black pepper, for the vinaigrette


Preheat the oven to 200 ° C (396F)
On a floured surface, spread the puff pastry to 2 mm thick, cut squares of 10 x 10 cm. Cut a right angle in each corner taking care not to join or unite the cuts on each corner.
Place a slice of cheese in the center of each square followed by a slice of mozzarella cheese, cross the cuts you made as shown in the video.
Glaze with the egg and bake for 20 minutes.
For the vinaigrette: mix the reduction of balsamic vinegar with olive oil, season with salt and pepper.
Serve the botana, decorated with fresh basil and the vinaigrette.

For the vinaigrette, cook the balsamic vinegar with a little sugar until it thickens, cools and mix with the rest of the ingredients. It will be much more consistent.
