Habanero is one of the most popular chili peppers in Mexican cuisine, its characteristic flavor and strong heat make it popular with many. It is commonly used a lot in southern cuisine, but with this recipe you can enjoy it accompanied by these Mexican elotitos.

Ingredients

4 portions
  • 1/4 cups mayonnaise
  • 1/2 cups Cheddar cheese, liquid, for mayonnaise
  • 1 clove garlic, roast, for mayonnaise
  • 2 habanero chiles, roast, for mayonnaise
  • salt
  • pepper
  • water, hot for the corn
  • 4 ears corn, without leaves
  • 1/2 cups fresh cheese, grated
  • 1/4 cups coriander, chopped
  • chilli powder, To accompany
  • lime

Preparation

Blend the mayonnaise together with the cheddar cheese, garlic, habanero peppers, salt and pepper until integrated. Reservation.
Cook the corn for 15 minutes in hot water, drain and place a wooden stick along each piece. Grill in a grill pan for 8 more minutes, turning constantly. Insert a wooden stick into each piece of corn.
Spread the corn with mayonnaise, cover with fresh cheese, coriander, chili powder and lemon to taste.

PRESENTATION

Serve with queso fresco, cilantro, chili powder, and lemon.

TIPS

If you want you can include a little sour cream to the mayonnaise to reduce the itchiness.
