Omelette Sandwich Valentine

2 portions
  • 4 eggs
  • 1 potato, girl with shell finely cut into miniature cubes
  • 1/2 onions, girl finely chopped
  • 1 can chipotle chili, passed through the blender
  • to taste salt
  • to taste black pepper
  • 1 cup manchego cheese, oaxaca
  • enough oil
  • 10 slices Ham, salami or any sausage in thin slices and on top of each other
  • 2 corn tortillas, or wheat flour


Put a little oil to heat in a large teflon pan
Since it is hot to fry the onion with the potatoes adding salt and pepper
While the potatoes and onions are cooking, beat the eggs with enough chipotle chili and a little salt
Once the potatoes are soft, add the eggs and let them cook over low heat and cover until the top starts to set
Turn the tortilla and finish cooking
Cut the ham using a heart-shaped cookie cutter using the 10 slices of ham. If you do not have a cookie cutter, you can use a sharp knife
With the same mold of heart or with the same knife (trying to leave the same size) you will cut the egg to put together a sandwich
With smaller cutters cut the tortillas also in heart shape
Put a little oil to heat in a small frying pan and fry the hearts of tortillas in the hot oil until they are crispy and golden.
Once the egg is in, take it out and immediately cut it with big heart cutter
You put them on a plate and over each heart you put some cheese, then you put the heart of ham on top and finally you put the egg-heart lid


Decorate the plate with the chipotle sauce in the shape of a heart and place the crispy tortilla hearts next to it.


With the 4 eggs and using a large pan you can cut the four egg hearts.
