4 portions
  • 2 red onions, medium, cut in julienne
  • 2 tablespoons olive oil
  • 1/4 teaspoons salt
  • 4 teaspoons honey
  • 1 leave bay (laurel)
  • 1 cup Red wine
  • 3 tablespoons balsamic vinegar
  • 2 ciabatta bread, large, with sunflower seed
  • 200 grams cured ham
  • 100 grams manchego cheese
  • 100 grams chihuahua cheese
  • extra virgin olive oils
  • black pepper
  • arugulas, (optional)

Put the onions in a hot pan with the two tablespoons of olive oil, season with pepper and salt. Cover and cook on very low heat for 20 minutes, occasionally uncover and move the onions. The onions will release a liquid, once this happens uncover and let it evaporate. Leave the onions cooking until they become soft.
Add honey and cook for other minutes. Add the bay leaf and the red wine and cook until it becomes like a kind of honey, more or less for an hour. Move occasionally.
Add the balsamic vinegar and let it come back to the consistency as a kind of honey. Try and add salt, pepper if you think it's necessary. Raise the heat a little and stir constantly until the onions become shiny and have a smooth consistency.
Cut the bread in half, you can remove a little crumb or leave it as is. Put a little of the caramelized onions, heat them again in a pan for 5 minutes.
Continue with the armed panini adding a layer with half of the manchego cheese and another of chihuahua cheese. On top add a well-served layer of Serrano ham. Add a little olive oil on the top cover and season to taste with pepper.
Heat the pan and place one panini at a time. Crush with the top part and watch the panini. Pull it out until you see that the cheese has already melted.

Cut in half in a triangle and serve with a green salad.

You can store the caramelized onion for other dishes such as snacks, or as a garnish for a good cut of meat.
