This is a traditional Mexican shepherd cake, prepare it and be surprised by its great flavor, you can accompany the cake with roasted pineapple slices.

Ingredients

4 portions
  • 500 grams pork meat, in fajitas
  • 2 tablespoons annatto
  • 1/2 cups Pineapple juice
  • 1 tablespoon oil
  • 4 bolillo bread
  • 2 slices pineapple, grilled
  • 1/4 red onions, chopped
  • 4 branches fresh coriander
  • salt

Preparation

Dissolve the achiote in the pineapple juice and add the meat.
Season with salt and marinate in the refrigerator for 5 minutes.
Cook the meat over medium heat until it is cooked.
Cut the bobbin in half.
Distribute the meat on the loaves, add the pineapple, onion and cilantro.
