Ingredients

6 servings
  • 4 cups of extra virgin olive oil
  • 2 spoonfuls of lemon juice
  • 4 teaspoons of lemon zest
  • 12 slices of prosciutto or ham serrano
  • 16 figs
  • 1 Cup of goat cheese cool at room temperature
  • bunches of arugula without stem

    Preparation

    Mix the oil, lemon juice and lemon scrape in a medium bowl. Put the serrano ham with 2 centimeters of separation each and spread with the goat cheese. Put figs on the cheese and the lemon mixture on top. Put salt and pepper. Then put 6 arugula leaves on top of each ham slice.
    Starting on the side of the end of the ham, roll the ham and cut the rolls in half. Put chopsticks in each roll and serve.
