Preparation
Beat the cream cheese with an electric mixer until smooth.
Add port and cayenne pepper.
Beat until smooth. Add the mozzarella cheese.
Add the scallion. Mix very well.
Wrap the cream cheese mixture in a plastic wrap and refrigerate at least one hour.
Once cooled, mold the cream cheese in the form of pineapple.
Place the cheese in a serving dish and start adding the almonds.
Start at the bottom and add little by little until the cheese has been covered.
Add the rosemary sprigs.
