Leaf cheese is a typical food in some areas of Ecuador. The name is due to the Achira leaf, in which the cheese is left to rest, giving it a unique and exquisite flavor.

Preparation
Wash the cheese and cut it into slices.
Boil water and salt in a bowl. Introduce a slice of cheese until very soft.
Wash the achira leaves previously, remove them and flatten the part near the stem, using a roller.
Place the hot cheese on two sheets and then inside a small plastic sleeve to give it shape and size. All this before it cools.
Store in a cool place or refrigerate.
