Leaf cheese is a typical food in some areas of Ecuador. The name is due to the achira leaf, in which the cheese is allowed to rest, giving it a unique and exquisite flavor.

Ingredients

8 portions
  • 1 kilo fresh cheese
  • 3 tablespoons salt
  • 8 avocado leaves, achira plant
  • 2 liters Water

Preparation

Wash the cheese and cut it into slices.
Boil the water and salt in a container. Introduce a slice of cheese until it is very soft.
Wash the achira leaves beforehand, remove them and flatten the part near the stem, using a roller.
Place the hot cheese on two sheets and then inside a small plastic sleeve to shape and size, all before it cools.
Store in a cool place or refrigerate.
