Spread the garlic on the bottom and walls of your foundue pot, leaving the crushed pieces in the bottom. You can also prepare the fundue in a regular saucepan. Add white wine and sherry and heat over medium-low heat.
Stir the cheese cubes in the corn starch until they are perfectly covered. When the wine is hot, add the cheese. Stir slowly with a wooden spoon at the beginning and then use a balloon whisk. When the cheese has melted, remove it from the heat and grate on it a little nutmeg. Season with salt and white pepper to taste. The fondue should be creamy and cover a wooden spoon. If it looks a bit watery, add more cheese. If it's too thick, add a splash of wine.
Prepare the base of your fondue casserole (or a bain-marie if you used a regular casserole). Take out the napkins and set the table. This is an appetizer to show off!
