Recipe of Salbutes

Delicious dish typical of the Yucatan region, these salbutes will enchant you. It is a very delicious recipe and everyone I know likes it.


5 portions
  • 1 chicken breast, whole without bone
  • 4 tomatoes
  • 1 lettuce
  • 1 cup onion, pickled
  • 1 bar annatto paste
  • 1 avocado
  • 1/2 kilos dough
  • enough oil
  • 2 carrots, parboiled, and cut into slices.
  • 1/2 kilos flour
  • enough salt
  • 3 sour oranges


Mix the dough with the flour and the EYE salt ... add the flour until it has a good consistency. once it is well mixed, it is crushed to form an omelet. Heat the oil, once hot, place the tortillas until they are brown and well cooked.
The lettuce is broken into sheets the size of the tortilla, the tomato is cut into slices, like the carrot previously cooked in water.
The chicken is boiled until it is cooked and we obtain a consommé, after this, we undo the red message or the achiote paste in the orange juice, we smear the chicken in this and we put it to roast or if you prefer you can fry it
Once the snack or annatto paste has been cooked, let the chicken cool down. When it is cold, we proceed to shred the chicken.
To make the salbutes, first put the tortilla, then add the lettuce, the shredded chicken, a little bit of pickled onion, a slice of tomato, a slice of carrot, and finally add a piece of avocado. And with this we finish our dish.


The oil should be at low temperature since the tortillas should be soft and not like toast.

Yo le agrego plátano macho a la masa, el pollo sólo es sancochado, le coloco su lechiga, cebolla morada encurtida y salsa catsup mmmmm

Hola Luis, es masa de maíz para hacer tortillas (se hace con cal, maíz molido y agua). Los salbutes son un platillo típico mexicano que lleva como base una tortilla llamada así "salbutes". No sé que tan sencillo sea en Venezuela conseguir esta masa, cuéntanos tu experiencia. ¡Saludos hasta allá!
