Nothing more traditional in the hot season than the famous cocktail comes back to life. Everyone has their version, I share mine, I hope it becomes your favorite.

Ingredients

6 portions
  • 600 grams cheap shrimp
  • 8 clams
  • 1 cup crab pulp
  • 10 fresh oysters
  • 1 octopus, boy
  • 4 red tomatoes
  • 1/2 cups ketchup
  • 4 lemons
  • 1/2 bunches fresh parsley, chopped
  • 1/2 onions, chopped
  • 2 serrano peppers
  • 1 teaspoon olive oil
  • salt
  • Dried oregano

Preparation

Ask them to give you the octopus without a beak and without ink. Count it inside your express pot, it will take you around 30 minutes. The water should cover the octopus, add a little sea salt.
Close the pot and leave it on high heat, when steam comes out of the pivot it is time to lower the flame and let it cook for 25 minutes. Allow the pot to cool before opening it. If you do it in a normal pot it will take a little more time, to know if it is cooked I recommend cooking it with a potato, when it is cooked, the octopus will be ready.
Wash the clams and oysters, remove them from their shell. Reservation.
Clean the shrimp well by removing the black part above and below, rinse in the stream of water.
Cut the octopus into small pieces, place it in a large bowl.
Pour the crab pulp, the surimi and the rest of the seafood into the bowl.
In a separate bowl place the chopped tomatoes, the ketchup sauce, a bit of tomato puree if you wish, and the juice of the lemons. Season to taste and add oregano.
Chop the onion finely and incorporate it into the preparation, do the same with the chile serrano. Pour the sauce over the seafood and mix carefully until everything is perfectly integrated.
Refrigerate for 3 hours minimum before serving.

PRESENTATION

Accompany with crackers.

TIPS

Be careful when you cook the octopus so it does not get hard. If you want to economize or do not find crab, substitute 1 cup of surimi.
