Delicious oysters cooked in the oven with a mixture of cheese, butter, bread, spinach and parsley. Rockefeller oysters are very famous in New Orleans in the United States where they were created.

  • 4 tablespoons unsalted butter
  • 2 cloves garlic, chopped
  • 1/3 cups ground bread
  • 2 shallots, chopped
  • 2 cups fresh spinach, chopped
  • 1/4 cups pernod
  • to taste black pepper, to taste
  • few Tabasco sauce
  • 2 tablespoons olive oil
  • 1/4 cups parmesan cheese
  • 1 tablespoon parsley
  • 2 dozens oyster
  • coarse salt
  • lemons


Melt the butter in a pan and add the garlic, cooking it for 2 minutes. Put the bread crumbs in a bowl and add half the garlic butter and reserve.
Add the echallots and spinach to the rest of the garlic butter and cook 3 minutes until the spinach is cooked. Add the Pernod and let it evaporate. Season with salt and pepper and a touch of tabasco. Let it be reduced a little.
Mix bread crumbs with olive oil, Parmesan cheese and parsley. Season with salt and pepper.
Preheat the oven to 450 F (230 C).
Put 1 tablespoon of the spinach mixture on each oyster and put 1 tablespoon of the ground bread mixture. Put thick salt in a tray and arrange the oysters on the salt (so they do not move much). Cook the oysters in the oven for 10-15 minutes until golden brown. Serve with lemon and Tabasco sauce.
