Preparation
For rice: Wash the rice with a strainer until the water no longer turns white.
Place the rice in a pot with 4 1/4 cups of water and let it soak for 20 minutes.
Place the pot over medium heat until it begins to boil, cover and cook over low heat for 20 minutes.
In a deep bowl mix the vinegar with the sugar and salt until both have dissolved.
In a large bowl place the rice and season with the rice vinegar. With a wooden spoon mix gently.
For the sushi: On a cutting board place the salmon and cut into strips of approx. 3 cm wide.
Place 2 tablespoons of rice at the start of each salmon strip and roll up.
Garnish with sesame seeds and green onions and place in a serving dish.
Prepare the soy sauce to accompany adding a bit of lemon and decorating with sesame and chives.
