This recipe is a Sinaloan classic, consumed throughout the state, but mainly in Mazatlan. They are the famous tacos of the governor (governor Labastida); but I just preferred to call them "marlin tacos" because another governor likes breaded shrimp tacos.

Preparation
Crumble the marlin, chop the tomatoes, chilies and onions, reserve.
Place the oil in a pan, over medium heat, add the marlin and cook for 2 or 3 minutes. stirring so it does not stick.
Add the chopped onion and chili, stir and let cook until the chili and onion are light, about three minutes.
Add the chopped tomato, and stir well, add the salt and pepper and let cook covered with the low heat for 4 minutes, checking that it does not stick. It should not dry.
Heat tortillas and form tacos.
