  • 500 grams tuna, (for the tataky)
  • 500 grams olive oil, (for the tataky)
  • 70 grams soy, (for the tataky)
  • 70 grams lime juice, (for the tataky)
  • 6 grams fresh coriander, (for the tataky)
  • 3 grams salt, (for the tataky)
  • 240 grams coconut cream, (for coconut cream)
  • 100 grams whipped cream, (for coconut cream)
  • .75 grams xanthan gum, (for coconut cream)

Preparation

For the tataky: We cut the tuna into strips, on the other hand we mix all the ingredients with the help of a rod, and marinate the tuna for 24 hours.
We mark the plate on all four sides, making sure that the center is raw, cut and served with a little coconut cream.
For the coconut cream: Mix all the ingredients with the help of a blender .
