These eggs are perfect to take to a picnic, day at the beach or just when you crave something practical to eat at the office.

Ingredients

20 portions
  • 10 eggs, cooked
  • 30 milliliters sour cream
  • 4 tablespoons mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon cayenne pepper, milled

Preparation

Cook the eggs in boiling water for about 10 minutes.
Once cooked remove the yolks taking care not to break the whites. Place them in a bowl and crush them with a fork.
Add the sour cream, mayonnaise, mustard. red pepper or cayenne, and a touch of salt.
Fill each egg with this mixture. You can use a pastry bag to give it texture. Sprinkle a little more pepper.

PRESENTATION

Decorate with cilantro.

TIPS

Do not overcoat the yolk so it does not turn black.
