These rich hard-boiled eggs are filled with egg yolk beaten with black olives, parsley, and mustard.

Ingredients

4 portions
  • 4 eggs
  • 1/4 cups olive oil
  • 4 tablespoons kalamata olive, chopped or black olives
  • 1 tablespoon fresh parsley, chopped
  • 1/2 tablespoons Dijon mustard
  • paprikas, to decorate

Preparation

Place the eggs in a pot and cover with water. Cook over medium heat until the water comes to a boil. Remove from heat, cover and allow them to cook for 15 minutes.
Remove the eggs from the water and go through cold water. Gently remove the shell from the eggs without breaking them.
Cut the eggs in half and scoop out the yolks with a spoon. Place the yolks in a deep bowl and mash with a fork.
Add the olive oil to the yolks little by little until they are fluffy. Add the olives and parsley and mix well.
Fill each half of the egg white with the yolk filling and decorate with the paprika.

PRESENTATION

Serve the eggs on a snack plate decorated with parsley and paprika.
