These rich hard-boiled eggs are stuffed with the beaten egg yolk with black olives, parsley and mustard.

Ingredients

4 servings
  • 4 pieces of egg
  • 1/4 of Cup of olive oil
  • 4 spoonfuls of kalamata olive chopped or black olives
  • 1 tablespoon of fresh parsley chopped
  • 1/2 tablespoon of Dijon mustard
  • paprikas to decorate

    Preparation

    Place the eggs in a pot and cover with water. Cook over medium heat until the water starts to boil. Remove from heat, cover and allow to cook for 15 minutes.
    Remove the eggs from the water and go through cold water. Carefully remove the eggshell without breaking them.
    Cut the eggs in half and remove the yolks with a spoon. Place the yolks in a deep bowl and with a fork crush.
    Add to the yolks the olive oil little by little until they are spongy. Add the olives and the parsley and mix well.
    Fill each egg white half of the yolk filling and decorate with the paprika.

    PRESENTATION

    Serve the eggs in a platter of snacks decorated with parsley and paprika.
