Patatas Bravas with Alioli

The patatas bravas, also known as patatas bravas or patatas bravas, are potatoes cut in the shape of irregular dice about three centimeters in size and that are fried in oil and accompanied by a spicy tomato sauce, called salsa brava, which It is poured over the potatoes and the whole hot set is served. It is a traditional dish in most of the regions of Spain, where it is usually taken accompanied by beer or wine, served as a serving containing approximately a quarter of a kilo of potatoes, or as a tapa or appetizer. The name "bravas" refers to the strength of the spicy sauce. It is usually considered one of the cheapest tapas due to the low cost of its ingredients and, in addition, it is suitable for vegetarians.

Ingredients

  • 1 kilo of potato or potatoes to fry
  • 1/2 olive oil
  • Salt
  • 1/2 clove of garlic
  • 3 pieces of chili basque peppers or dried red chilies
  • tomato sauces (from boat)
  • 1/2 clove of garlic

  • 1/4 of olive oil

    Preparation

    Preparation of potatoes: Cut the potatoes into pieces, wash well and let drain. In a pan, put the oil over medium heat and confit the potatoes for 20 minutes. Take out and let cool.
    Preparation of the spicy tomato sauce: In a frying pan, put oil, chopped garlic and chopped chilli pepper. When it begins to brown add the jar of tomato sauce. Cook over low heat for 2 minutes. Let it cold down.
    Preparation of garlic mayonnaise: Casca the egg to a bowl. Should a piece of shell fall, remove it. Place it in the glass of the blender , add the lemon juice and salt. Pour the oil little by little, while you bats everything. Plug in the blender and insert the beater arm into the beaker. Turn it on and hold it still without moving until it thickens. When you see that it has taken body, make smooth, ascending and descending movements, until a homogeneous sauce remains.
    Emplatado: Mix the potatoes and the garlic mayonnaise. We ended up placing threads of hot sauce, chives and pepper.

    TIPS

    If you are not going to use mayonnaise at the moment, it is advisable to cover it with plastic and store it in the refrigerator.
