Prepare this popular Mexican street snack made from masa dough, filled with buttery refried beans, and topped with crispy chorizo sausage, crema, fresh cheese, and salsa.

Ingredients

8 portions
  • 1/2 cups white onion
  • 2 cups chorizo
  • 1/2 kilos masa dough
  • 1 tablespoon table salt
  • water, for kneading
  • 2 cups black beans, cooked
  • cream, for serving
  • green sauce, for serving
  • serrano chile, sliced, for serving

Preparation

In a frying pan, cook onion and chorizo sausage over medium heat for 5 minutes or until the chorizo is crisp and brown. Reserve until ready to use.
Place masa dough on a smooth work surface. Add salt and some water. Knead with your hands until the masa softens.
Divide masa dough into 8 balls. Roll each ball of dough in your hands and pat it out to form tlacoyos. Fill each tlacoyo with refried beans.
In a comal (smooth, round griddle), cook the tlacoyos over medium heat for 15 minutes or until cooked through.
Serve tlacoyos warm and topped with chorizo sausage, queso fresco, crema, green salsa, and serrano chile slices.

TIPS

Check if the masa dough is fully kneaded by forming a little ball of the dough. If the ball does not tear or crack easily it means the masa is ready.
