Ingredients

8 portions
  • 150 milliliters dry white wine
  • 150 milliliters fish soup
  • 1 pinch saffron
  • 900 grams scallop, large without shell
  • black pepper
  • 3 tablespoons olive oil
  • 1 onion, girl finely chopped
  • 2 cloves garlic
  • 150 milliliters whipping cream
  • 1 drizzle lemon juice
  • parsley, chopped to decorate

Preparation

Bring the wine, the fish stock and the saffron to a boil.
Cover the container and let it simmer for 15 minutes.
Remove the white muscle from each ax callus and discard it.
Cut the corns of the ax into thick slices, including the corals if they are attached to them.
Dry them on kitchen paper and add salt and pepper.
Heat the oil in a thick base pan. Fry the onion and garlic for 5 minutes until soft and lightly browned.
Put the ax calluses in the pan and stir a little so that they are simmered for 5 minutes (or until they become opaque).
Remove the tripe from the pan and place in a preheated serving bowl.
Put the saffron broth in the pan and let it boil over high heat until it is reduced in half.
Lower the heat and add the cream, little by little and stirring. Cook the sauce over low heat until it thickens.
Return the tripe to the pan and heat for 1-2 minutes in the sauce.
Add the lemon juice, salt and pepper.

PRESENTATION

Sprinkle with parsley to serve.

TIPS

It is important that the ax calluses do not overcook or they may remain chewy and hard.
