The aguachile ax callus are delicious ax callitos as a botanita. It is a Mexican recipe made with seafood, onion, lemon, chili pepper and cucumber. It is very good to nibble or to serve as an entrance.

Ingredients

4 portions
  • 1/2 kilos scallop
  • 2 cucumbers, big
  • 1/2 red onions
  • 10 lemons
  • 8 pequin peppers
  • soy sauce
  • black pepper

Preparation

The ax calluses are accommodated in a Pyrex.
They get into the refrigerator for 8 to 10 minutes to get a little hard.
While they are cooling the calluses you squeeze the lemons and strain.
The cucumbers are divided into thin slices or into small squares (in this case without the seed).
We split the onion finely into slices in the shape of a moon.
The chile piquín you grind with a spoon.
We remove the Ax Callos from the refrigerator and add salt and pepper, add the cucumber, onion, chili pepper, lemon juice and a splash of soy sauce.
Stir everything very well with plastic or wooden spoon and let stand about 3 minutes.

PRESENTATION

It can be done with shrimp, these are peeled and opened in butterfly style, the lemon juice should cover them.

TIPS

It is complemented with toast.
