Aztec Tuna Cake

A new version of the classic recipe! Prepare this delicious Aztec tuna cake, cooked with a tomato and guajillo chile sauce, with corn tortillas and layers of cream and many grilled barbecue cheese baked in the oven.

Ingredients

  • 5 pieces of tomato for sauce
  • 3 teeth of Garlic for sauce
  • 1/4 of piece of onion for sauce
  • 5 pieces of guajillo chile clean, hydrated in hot water, for sauce
  • 1 tablespoon of vegetable oil for filling
  • 1 tablespoon of Garlic chopped
  • 1 Cup of onion fillet, for filling
  • 1 Cup of a grain of corn
  • 3 cups of tuna in water drained, for filling
  • 1 pinch of Salt for filling
  • 1 pinch of Pepper for filling
  • 1/4 of Cup of oil to cook omelette
  • enough of Corn tortillas
  • 1 Cup of sour cream
  • 3 cups of Asadero cheese grated
  • 4 spoonfuls of a grain of corn

    Preparation

    Preheat the oven to 200 ° C.
    For the sauce, liquefy the tomato with the garlic, onion and guajillo chile with the soaking water until obtaining a homogeneous sauce.
    Heat a pot over high heat with the oil, fry the garlic, onion and corn, add the sauce that you previously liquefied, add the tuna, cook for 20 minutes or until the tomato is cooked and the liquid is reduced. Season to your liking with salt. Reservation.
    Heat a pan with the oil, fry the tortillas and place them in an absorbent napkin, reserve.
    In a glass bowl, place a layer of tortillas, a layer of filling, cream and cheese. Repeat until the mold is filled, finish with cheese and chopped eggs. Bake about 15 minutes or until the cheese melts.
    Serve immediately.

    PRESENTATION

    Serve a slice of Aztec cake with salad.

    TIPS

    You can prepare this recipe with chicken, shredded meat or whatever you want.
