Ingredients

4 portions
  • 1 plantain
  • 600 grams smoked tuna
  • 2 tablespoons peppermint, chopped
  • salt, and ground pepper (in quantity to taste)
  • 1 cup panko bread crumbs, or ground bread
  • vegetal oil, (the necessary)
  • 1 red bell pepper, chopped in cubes
  • 3 tablespoons fresh coriander, chopped
  • 1 tablespoon peppermint, chopped
  • 3 branches watercress, chopped
  • 2 tablespoons fresh scallion, chopped
  • 1 tablespoon extra virgin olive oil

Preparation

Cook the banana in a pot with water until soft.
In a bowl, grind the banana with a fork and mix with the tuna, cilantro, egg, mint, salt and pepper.
To form pancakes and to embroider with panko, to fry in frying pan with hot oil.
To accompany, mix the red pepper with herbs, oil and pepper.

PRESENTATION

When serving, accompany the pancakes with the salad.
