A different way to prepare birria for lent time

Ingredients

4 portions
  • 3 cloves garlic
  • 6 tomatoes, big
  • 5 whole cloves
  • 1 onion, big
  • 1 cup vinegar
  • 2 dry ancho chile peppers, soaked
  • 2 leaves bay (laurel)
  • 1 pinch 4 peppers blend
  • 4 fish, of your preference, it can be in pieces
  • salt
  • 1 pinch oregano
  • 1 pinch cumin

Preparation

Blend broad chiles with 2 cloves of garlic, 1/4 onion, 3 cloves, peppers, salt and vinegar.
Spread the pieces of fish with the previous mixture and leave to marinate for approximately 30 minutes.
Cook the tomatoes with 1 clove of garlic, 2 cloves, a piece of onion and the bay leaves.
Blend the cooking of the tomatoes together with the pinch of oregano and cumin and salt.
Grease a refractory and place the marinated fish. Bake at 180 degrees Celsius for 15 minutes.
After 15 minutes, add the sauce that we previously liquefied and bake another 10 minutes more.

PRESENTATION

It is served hot with chopped onion and lemon, if you prefer you can add cilantro and radishes.

TIPS

If you wish you can also cook on the stove, only cover with a lid or aluminum to achieve even cooking.
