This classic Peruvian ceviche in a lighter version, based on white fish marinated in lemon juice, accompanied by red onion, apple or chili pepper, corn or corn, seasoned with coriander and finely chopped garlic and served with sweet potato cooked with lettuce French This fresh preparation is ideal to share with whomever you prefer.

Ingredients

4 portions
  • 1/2 red onions, filleted
  • 1/4 cups lemon juice
  • 1 tablespoon salt
  • 2 cups sole, cut into cubes
  • 3 Chile Apple, or chili, finely chopped
  • 1/4 cups fresh coriander, finely chopped
  • 1 pinch salt and pepper
  • 1 sweet potato, cooked and cut into thick slices
  • 1/2 cups whole kernel corn, (corn) cooked
  • to taste french lettuce, To accompany

Preparation

In a bowl add the onion with the lemon juice and salt, add the fish, chili, garlic, cilantro, add a little more salt and season with pepper.
Rest in refrigeration for 30 minutes.
Serves with lettuce, elotitos, and sweet potato. Enjoy

PRESENTATION

Serve the ceviche and accompany separately with lettuce, elotitos and cooked sweet potato to reduce itching.

TIPS

Squeeze the lemons only ¾ so that it does not remain bitter.
